Meat Loaf Recipe
4 T Spoons Butter
1 ½ Large Onions, Diced
½ C Diced Celery
3 Bell Peppers, Diced
¼ C Green Onion
Season Salt (Lawry’s, Tony Chachere’s or Chef Paul’s Magic Seasoning)
6 Large cloves of garlic minced
1 T Hot Sauce
1 T Worcestershire Sauce
2 Bay Leaves
½ C Evaporated Milk
½ C Catsup
2 Lbs Ground Beef
1 Lbs Pork Sausage (Breakfast or Chorizo)
2 Large Eggs, Beaten
1 C Italian Bread Crumbs
Melt the butter and sauté the onions, celery, bell peppers and green onions until they start to soften. Season mixture with the seasoning salt to taste (approximately 1-1 ½ T), add the Worcestershire Sauce, hot sauce, and bay leaves. Cook, stirring occasionally until the mixture becomes very soft and sticky. Stir in the evaporated milk and catsup. Mix and cook for another 2-3 minutes, stirring occasionally. Remove from heat, let cool to warm or room temp and remove the bay leaves.
Pre-Heat Oven to 350°F.
Place the beef and sausage/chorizo in a large mixing bowl. Add the eggs, the mixed vegetable mixture, and breadcrumbs. Mix by hand only enough to distribute the ingredients evenly. Place mixture in a 13×9 inch-baking pan. Shape into a loaf 12″x6″x1 ½”. Bake uncovered for 25 minutes. Raise heat to 400°F and continue cooking until done (Approximately 35 minutes)
